Welcome... ...and more on the subject of serving and clearing... Here Patrick a waiter with over 25 years of work experience wrote: "My training (with 25 years in the business) is ; Serve all food from the left with the left hand, pick up from the right with the right hand. ALL beverages should be served and picked up from the right (use the right hand whenever possible, but you may have a red and a white wine in your hands simultaneously)." Patrick And Paul from South Africa says "Well I always say , What ever side is the LEAST intrusive of your Guest. If you can get the Plate Easily without disturbing your Guest , and they have finished it , Its a lot more polite than moving to the left and getting in the way.... Anyway.. Somehow i don't think guests have read the rule book..." Paul "In France we teach : To serve from the right for plated service and clear from the right (American service). To serve from the left for goods served into dishes and clear from the right (English service)."
